When in February we are all longing for a soon spring to come. And with spring finally arrives the time of farmstead goat cheese. To shorten the time for you we introduce *Vermenton*, a raw milk goat´s milk representative from the Burgundy region in east-central France which we were lucky enough to catch before.
*Vermenton* is a fresh and soft cheese with alluring fat molecules behind it´s ash rind that delivers mild and nutty flavors. If you can keep yourself from eating the whole pie at once you will see it transform into a more buttery stage that comes with a clear intensity boost while still keeping its light and elegant acidity.
